Food & Finances Friday--Crown & Nachos

Finances: I am very excited about this evening. I am signed up to take the Journey to Financial Freedom class offered by Crown Financial Ministries, at a local church. I'm going with a friend, which will make processing the information that much more fun! With the recent news of Jersey#2's need for more in depth medical treatment, we know we've got to add another savings to the budget right now...savings for those expenses. So, I am hoping to learn a lot in this class, and find some added inspiration to keep hiking on this uphill road.

Food: This week I learned that nachos make an easy, inexpensive, filling meal or treat for my family. It seems that my children and all of their friends like one or more of the ingredients, so it is easy to please everyone at once. Tortilla chips, shredded cheese, and refried beans go a long way! Personally, I like to add shredded chicken, salsa, sour cream, lettuce, and tomato. Mmm! It is nice to be able to make that meal/snack with any combination of ingredients. So, when I am overdue to go to the grocery store again, and a few ingredient are missing from the cabinets or fridge, I can still serve nachos with what is on hand, and no one is complaining or feeling deprived. Whew!

  1. For adults, you might also want to try more of a taco salad - chips then beans, meat, and cheese (warmed up so the cheese melts). Then I put lettuce, tomato, salsa, and/or sour cream on top. I use left over taco meat normally, but chicken works well too!
